A Beginner's Guide to Salami
Salami—you know it, but what exactly is it? Typically made from pork or beef, salami is a type of cured sausage that’s fermented and dried. It's low in carbs and calories but high in protein. It also contains a good number of vitamins and minerals, including vitamin B12, thiamine, niacin and zinc. Stop by to see us for some great varieties!

The difference between cured and smoked meats
Cured meat vs. smoked meat: What's the difference? Cured meat is preserved primarily through the salt that inhibits meat, creating an inhospitable environment for unwanted bacteria. This allows some types of cured meat to not require the same type of storage and refrigeration that other meats would need. Meanwhile, smoked meat can be cooked through a low heat or cured, then cold smoked to dry the meat. Cold smoking is not actually cooking, but rather drying.

What to serve with liver pâté
Serving liver pâté but not quite sure what to put out with it? A fresh loaf of French bread is a great start. So are seed crackers, Greek salad, bacon jam and crepes. For heartier options, try filet mignon and baked potato. For more adventurous but tasty choices, try fried capers, fried pickles, prosciutto pastry twists, and Gruyere and tomato tartine. That's plenty to start with, and the variety should also tell you there are no rules—it's all about experimenting with flavours!

Quick Guide to Meat & Wine Pairings
In honour of Valentine's Day, we bring you a quick guide to meat and wine pairings that are perfect for the occasion. An excellent steak or fresh seafood is great all on its own, but the right glass of wine can take it to a completely different level. In general, lighter meats and flavours work well with whites, while richer and darker meats pair best with reds. Consider what you've got on your menu tonight, and don't hesitate to ask the advice of a sommelier!
