Yes. You. Can. Measure, mark and sew - it’s going to be fine. . Mark your hem with chalk/ pen, pin it and don’t worry about the bulk. Take it to your machine and sew it from the right side, so the hem is facing down. What will happen is those amazing feed dogs on your machine will take through the excess fabric faster than the top of the garment and your excess fabric won’t be an issue. . Bonus point being that the needle stitch is a nicer looking stitch so you get to see that on the right side of your garment too. .
