CREAMY LEEK & BUTTER BEAN PIE
Lets all give creamy leeks some more love. I don’t think they actually are traditional on a Christmas dinner, but I always make them, and to me, they complete the plate. Because everything is better in pastry, here we have put them in a pie. Soft caramelised leeks and butter beans in a creamy cheesy vegan sauce, encased in a crisp mustard and thyme shortcrust pastry. 400g wholemeal macaroni pasta 1/2 a pumpkin or butternut squash, (if not organic, peel it.
