Why stand over the stove to make a stir fry when you can bake this sticky, gingery tofu mushroom stir fry in the oven? In just 1 pan and 2 steps! It is absolutely delicious served over rice or noodles or as the filling for lettuce wraps!
One of a Kind Healthy Noodle Recipe That You Can Try All Year Round!
Indulge in a savory noodle sensation with this simple yet flavorful recipe. Mix together in a small bowl: 1/2 tbsp soy sauce, 1 tbsp vegetarian oyster sauce, 1/2 tsp maple syrup (or sugar), 1 tsp dark soy sauce, 1 tsp cornstarch, and 1/3 cup cold water. In a skillet, heat 1/2 tbsp olive oil. Fry 1/4 block (about 87.5g) extra firm tofu until golden. Add 2 minced garlic cloves and the white parts of 2 finely sliced green onions; fry for 2 minutes. Pour in the sauce, simmer for 2-3 minutes until thickened. Serve over 250g cooked udon, top with 1 tsp sesame oil and green onion greens. Enjoy!

This version uses tofu instead, and according to him, it’s better than the real thing. Bonus is, no animals harmed ☺️ Protein breakdown: Extra firm tofu: 48g Pasta (I used Rummo brand): 28 Peas: 10g Nooch: 6g = 92 /3 = 30g /2 = 46g Ingredients (serves 2-3) 300g extra firm tofu 2 tbsp tamari or soy sauce 1 tbsp extra virgin olive oil 1/2 tbsp maple syrup 2 tsp smoked paprika 1 tsp garlic powder 2 tbsp cornstarch 4 cloves of crushed garlic 200g frozen peas 200g dried pasta of choice, cooked 1 tbsp white miso paste 80-100ml (one ladle) salty pasta water 3 tbsp nutritional yeast To serve: black pepper, chilli flakes by @sophsplantkitchen

Peanut Gochujang Udon 🍜 The quickest and most flavourful meal 1 serving udon, I prefer the fresh frozen kind because the noodles are chewier 1.5 tbsps smooth peanut butter 1 tbsp gochujang paste 1 tsp soy sauce 1/2 tsp rice vinegar 2-3 tbsps hot water 1 tsp toasted sesame oil green onion green, thinly sliced toasted sesame seeds 1. In your serving bowl, combine peanut butter, gochujang, soy sauce and rice vinegar. 2. Cook udon according to package directions, and at the end of the cooking time, reserve some of the cooking water if using frozen noodles. 3. Add hot water to sauce ingredients and whisk until smooth. Then add the udon and sesame oil, stir to coat the noodles and top with green onion and toasted sesame seeds. Enjoy! 🎥@freshofftheraq

Ingredients: 1 onion and 3 garlic cloves 1 tbsp curry powder 1/2 can coconut milk 1 cup vegetable stock 2 tbsp smooth peanut butter Juice of 1 large lime 1 tbsp brown sugar 1 tsp miso paste 1 tbsp soy sauce Salt and pepper to taste Ramen or soup noodles Crushed peanuts, chives, chili oil, sesame seeds, crispy onions Instructions: Fry minced garlic and onion until browning. Add curry powder and fry for a few minutes. Add stock and coconut milk and simmer until thickened and reduced. In a bowl, mix peanut butter, miso, brown sugar, a splash of hot water, and lime juice. Combine broth with peanut butter mixture. Add cooked noodles and top with garnishes
