La vera novità di questa ricetta è nell’impasto. Essendo per metà pugliese, non potevo non provarla con l’impasto del calzone di cipolle. Una sorta di frolla all’olio evo e vino bianco, sottile e molto croccante, per me perfetta per accogliere un ripieno fondente e goloso come questo. Lo abbiamo lasciato abbastanza tradizionale.
