Cajun Maque Choux
Mentioned numerous times with some of my Cajun Thanksgiving recipes, this is the popular corn side dish, maque choux. Cajun maque choux is a slightly sweet and spicy dish popular at both summer cookouts, and during holidays like Thanksgiving and Christmas in southern Louisiana. Peppers and onions are braised in bacon fat (or use butter or oil) and then fresh corn is added. With a bit of stock and/or cream added to it, the corn is then stewed until tender. I'm admittedly not a huge corn person, but this dish was incredibly tasty. The ingredients and cooking method give maque choux so many layers of flavor that I can't recommend it enough.
