Evelyn - Mediterranean Chicken Bake Mediterranean Delight: Herbed Chicken with Roasted Vegetables Ingredients: 4 boneless, skinless chicken breasts 2 tablespoons olive oil 1 tablespoon lemon juice 2 teaspoons dried oregano 2 teaspoons garlic powder Salt and pepper to taste 1 cup cherry tomatoes, halved 1 zucchini, sliced 1 red onion, sliced 1 bell pepper, sliced 1/4 cup Kalamata olives, pitted and halved 1/4 cup feta cheese, crumbled Fresh parsley for garnish Directions: Preheat the oven to 400°F (200°C). In a large bowl, combine olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Add the chicken breasts and coat them well in the marinade. Allow to marinate for at least 15 minutes. While the chicken is marinating, prepare the vegetables. In a large baking dish, arrange the cherry tomatoes, zucchini, red onion, and bell pepper. Drizzle with a little olive oil, and season with salt and pepper. Place the marinated chicken breasts on top of the vegetables in the baking dish. Scatter the Kalamata olives over the chicken and vegetables. Bake for 25-30 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C). During the last 5 minutes of baking, sprinkle the crumbled feta cheese on top and return to the oven. Once done, remove from the oven, let it rest for a few minutes, and garnish with fresh parsley before serving.
