I worked at Chi-Chi's for 16+ years. My favorite sauce over all those years was called Diablo Sauce. My favorite food to eat there was the Soft Taco Enchilada style with Diablo Sauce. A little shredded lettuce and pico de gillo on both sides. Yum!

You can serve this on the fried flour tortilla sprinkled with a cinnamon sugar mix as it was done in the later years or in a sherbet glass as it was in the early 80's. At one point we even offered these in chocolate and strawberry as well. Prep time is for the ice cream ball to harden.

I have long been aware of the existence of Chi-Chi’s restaurants I’ve just never been to one. This is a recipe that I found online associated with the restaurant, and I had to give it a try. It was excellent! So much so that I decided to find where the location of the closest restaurant was to where I live so that I could give it a try. The joke turned out to be on me, they have closed the restaurants nationwide. Oh well. At least I have this recipe, and now you do too.Chi Chi’s Enchilada…
