I was quite stubborn in trying to use pasteurized milk from the supermarket to make this, even though I did use rennet. The first time I tried fresh milk, it had rennet but it still failed because I measured the temperature incorrectly. Is Mozzarell cheap where you live? Where I live, it's cheaper to make because it's quick and standard, but when I made it myself, I learned the process and part of the reason why rennet is used when making cheese, it's really special.
