#Mulled wine, #recipe by chef Emma Currie of the Brass Cafe in Mount Pleasant #Michigan: 1 bottle red wine (something light like a chianti or bordeaux), 1/4 cup honey, 2 cinnamon sticks, ¼ tsp of grated nutmeg, 1 thumb size piece of ginger, 1 orange (zested and juiced), 4 whole cloves, 3 star anise, 4 peeled oranges for garnish.

This mulled wine is sweet and with tons of complex flavours: cloves, orange, star anise, lemon and cinnamon... ugh! So nice.

Mulled wine is a warm drink usually made with red wine and a handful of mulling spices. I grew up with a German version called glühwein, but countries all over the world have their own version. Mulled wine is an essential in our home during the freezing winter months as it warms the chilled body while also being delicious and festive. This version’s secret ingredient is molasses, which is the perfect sweet coun- terpart to the bright orange zest and tart red wine.
