Heat peach puree with 2 tbsp honey/agave in a saucepan until hot (over 120˚F) but not boiling. Add the gelatin mixture to the puree, stirring until dissolved. Cool for 5 minutes. Divide mixture into 2 bowls; optionally add 1½ tsp tart cherry concentrate to one bowl. Use droppers to fill molds, then refrigerate for 1.5 hours.
