Spring is in the Air with the Sunny days and warmer temps...and finishing up my Spring planting in the backyard...well I decided I was in a CUPCAKE mood and of course the pretty spring colors of Easter...I decided to get fancy in the kitchen and make some "Easter Cupcakes"...I'm no Martha Stewart that's for sure BUT... I just love to browse through Gourmet cupcake recipes! and this is what I made. Vanilla Cupcakes with Strawberry frosting!..Yum! Recipe: 1 1/2 cups all-purpose flour (spooned and leveled) 1 1/2 teaspoons baking powder1/2 teaspoon salt 1/2 cup milk 1 teaspoon pure vanilla extract 1/2 cup (1 stick) unsalted butter, room temperature 3/4 cup sugar 2 large eggs For the Frosting 1/2 cup (1 stick) unsalted butter, room temperature 3 cups confectioners’ sugar 1/2 cup milk 1/2 teaspoon strawberry extract or... fresh strawberries mashed food coloring 2 drops of red (optional) Bake 350 for 20-25 min.
