Blueberry Pancakes 🥞🫐 (Makes 2 large pancakes)
Ingredients:
• 1 banana (on its last leg, if possible)
• 1 egg
• 3 tbsp maple syrup
• 1 tsp vanilla
• 1/2 c oats
• 1 tsp cinnamon
• Dash of salt
• 1/2 c frozen blueberries + 2 tbsp almond flour for coating
Maple syrup (optional topper)
Instructions:
• 1) Add your banana and wet ingredients to a bowl and mash/mix together
• 2) add your dry ingredients to a blender cup (I used an immersion blender)
• 3) Add your wet ingredients to your dry ingredients and blend until combined
• 4) Coat your frozen blueberries in almond flour) can use fresh, I just like frozen for these) then toss them into your batter
5) Heat a pan with nonstick oil and pour your batter in, cooking each side until brown
