Rice and peas is a staple food in Jamaica and much of the Caribbean. This version of rice and peas uses canned beans, which makes it quicker and easier to make than with dried beans.

• 2 cloves Garlic
• 1 tsp Ginger
• 1 540 ml can Kidney beans, red
• 1 Onion, medium
• 2 stalks Scallions
• 1 Scotch bonnet pepper
• 4 stalks Thyme
Canned Goods
• 5/8 cup Coconut milk
Pasta & Grains
• 2 cups Brown rice
Baking & Spices
• 1 tsp Allspice, ground
• 1 tsp Black pepper, ground
• 1 tsp Salt
Oils & Vinegars
• 1 tbsp Canola oil
Liquids
• 2 1/4 cups Water
Other
• ¾ cup liquid from the canned red kidney beans
