Ingredients (per pita):
• Pita (I used gluten-free)
• 0.5 cup of rinsed chickpeas
• 1 tsp olive oil
• 1 tsp lemon juice
• 1/4 tsp thyme
• 1/4 tsp minced garlic
• salt & pepper
• hummus of choice (I used red pepper)
• olives
• spinach or arugula
• cherry tomatoes
• vegan feta (I used Farm Boy’s)
• balsamic glaze
Instructions:
• Warm up your pita in the oven or microwave
• Drain & rinse chickpeas. Toss in olive oil, lemon juice, salt & pepper, thyme and minced garlic
• Spread hummus all over the pita
• Top with spinach, chickpea mixture, feta, olives & cherry tomatoes
• Add balsamic glaze on top
• Cut into slices & enjoy!
