Stuffed potato skins! Something new for me... My new friends from France left a package of frozen skins here during their visit and I put them to good use tonight. I guaced one up and tried another with sour cream that I made with natural yogurt and lemon juice. The stuffing options are endless. Tonight I just used what I kicking around - ground turkey peppers garden tomatoes green onions and fresh herbs. Im imaging how much more nutritious sweet potato skins would be and what Id stuff them with. Do you have any ideas??? Im so happy to have fresh basil! This is one of my go to dips and its so much better when made with fresh basil. Its crumbled goat cheese topped with basil pesto and chopped kalmata olives. Yes its yummy with its complex flavours and textures but I love how simple it is to make. Serve with your choice of crackers and/or veggies. This is one meal I will dream of when I remember France. Its not every day a girl eats duck confit in the gardens of @chateaudeversailles. Until next time France... Its zucchini season!! Straight from the garden here in France sliced and topped with olive tapenade and feta cheese. If I would have thought it though better I may have added a drizzle of olive oil to make it feel like a gourmet appetizer.
