Remove spicy Italian sausage from its casing, add it your skillet and brown it off. Next, add finely diced onions and cook until fragrant. Then add Calabrian chillies and cook down until caramelized. Add minced garlic and cook till fragrant. Deglaze with white wine and let simmer for a few minutes until the alcohol is cooked off. Next add your chopped mushrooms and cook until soft. Add your chopped spinach and cook for 1 minute until wilted. Cook your gnocchi until they float and add to your sauce. Finish with butter, Parmigiano Reggiano, a splash of pasta water.
