Easy chicken pelau
Ingredients • 1 lb chicken drumsticks, chopped into 2-3 pieces • 3 cloves of garlic, minced • ½ a white onion, chopped • 1 cup parboiled rice • 1 cup of pigeon peas • 1 cup of coconut milk • 1 cup of water • 1 tsp of Greedygirlcooks pepper jelly or 1 scotch bonnet pepper • 1 tbsp of butter • 3 sprigs of fresh thyme • For seasoning chicken • 1 tsp kosher salt • ¼ tsp pepper • 1 tsp all purpose seasoning • ½ tsp turmeric • ½ tsp paprika • 1 tbsp green seasoning • For burnt sugar: • 2 tbsp of brown sugar • 2 tbsp of canola oil or any neutral cooking oil that can be cooked at a high heat Instructions • Prepare chicken by chopping drumsticks into 2-3 pieces (you can keep the skin on or remove) • Once the chicken is chopped, rinse chicken with water and pat dry with pa

Trini garlic sauce. Start with mayo. One full cup of fat. Feel free to double and triple the recipe. Sugar, celery salt is replacing salt. Trust me, it makes a difference. Fresh garlic, pimento peppers. If you can't find that, you can use some chichacha peppers that goes in. And here is the star of the show. The Shadow Benny also known as cilantro. Not to be confused with cilantro. Then some white distilled vinegar. And we're going to cover and blend until it's very very smooth. If you're new to this sauce in Trinidad we love to have it on a bacon shark, a bacon fish, bacon shrimp, fries, barbecue, gyro, so delicious. Pour it out into your bowl. Start in your bowl with two cups of currants. To that currants we're going to add brown sugar. Light brown is best or white. Do not use dark brown. Some salt and some freshly created nutmeg. Along with a pinch of cinnamon. In goes the vanilla essence or almond essence. Just a touch. And then give this a good mix. Once mixed set aside. And here's the secret ingredient. We're going to be using frozen puff pastry sheets from the supermarket. These are readily available now so you don't have to go through the hassle of making puff pastry. Put half of your mixture on the puff pastry sheets. Spread it out evenly and then begin rolling. You want to roll into a tight long log. And finish seam side down and tuck in those ends. Do the same for the other one. And then you have two that goes to bake at 350 for 40 minutes until it's golden brown. Cool and then cut and enjoy.
