SMASHED CUCUMBER SALAD WITH MARINATED FETA
This salad is loaded with flavor. If you’re looking for something totally satisfying and refreshing as the weather gets warmer, this is it. Have you tried smashed cucumbers? They’re so good. Smashing cucumbers not only changes their texture, making them slightly softer on the inside, but also allows them to really absorb any flavor added to them. These cucumbers are full of salt and vinegar flavors, resulting in the most refreshing combination. Adding marinated feta takes it to the next level. The feta is marinated in a mixture of olive oil, lemon juice, and garlic. So many delicious flavors! The salad is complete with sunflower seeds and pickled onions. They add color, crunch, aromatics, and a bit of tanginess to the salad.

DOUBLE CHOCOLATE ZUCCHINI BREAD
As a dietitian, I eat dessert every single day. And not little pieces of dark chocolate. Real dessert, like this DOUBLE CHOCOLATE ZUCCHINI BREAD. Because the best way to manage cravings and prevent them from being uncontrollable is to eat the food you’re craving. I highly recommend the same for you! If you have a sweet tooth, the best way to “manage” it is to eat dessert regularly. This zucchini bread is a great place to start ☺️ Totally chocolatey, super moist texture, and so delicious.

Mexican Street Corn Salad
This Mexican Street Corn Salad is perfect for the labor day weekend or a summer bbq outside. The corn is charred and then cut off of the cob. You can use a grill or grill pad here. You can also use tongs to hold the corn over a gas stove until it’s charred. The charred corn is mixed with Cojita cheese and scallions. Everything comes together with the most delicious dressing. It’s made with mayo (I used Primal Kitchen), lime juice and zest, and garlic. So simple, but so flavorful. Make sure to dip with tortilla chips! Crunchy veggies work too, but the chips are a non-negotiable, IMO

Fresh Peach Salsa
The most dreamy combination of savory and sweet! This salsa makes a perfect appetizer, garnish, or dip. Peaches are the star of the show – they’re cut into the biggest pieces so that they really shine. When paired with diced tomato, bell pepper, and red onion, it all comes together in the most perfect savory and sweet blend. Scoop it up with chips as an appetizer, add it as a topping to grilled chicken or salmon, or serve it as a side dish. This one is not to be missed this summer.

All the amazing cheesiness of regular mac & cheese, plus the warm, fall flavors of butternut squash. This recipe is so delicious. I’ve seen a lot of versions of butternut squash mac and cheese. Usually, they replace the cheese entirely for butternut squash. They call it a “healthier” version of mac & cheese. This isn’t one of those. Because I don’t think mac & cheese needs to be replaced or made healthier. I think it’s perfectly delicious as is. Instead, this recipe adds butternut squash to really elevate the flavor. It gives the mac & cheese a burst of warm, fall flavor. It also adds plenty of nutrients, like vitamin C and fiber. And it’s just a fun spin on a traditional mac.

Easy Panzanella Salad with Burrata
If you love tomatoes, you have to make this Easy Panzanella Salad with Burrata. And honestly even if you don’t like tomatoes, you still have to make this salad. In season tomatoes are probably one of my favorite foods. They are SO delicious when they’re in season and perfectly ripe. Like with a lot of produce, tomatoes are 100x better when they’re perfectly in season in the summer. And this recipe totally plays up on their seasonality. The tomatoes are first salted to help release their juice and bring out their flavor. Then, delicious, crusty sourdough is added to the mix. Everything is mixed with a light and refreshing dressing. And lastly, topped with creamy burrata cheese. So, yeah, it’s a lot of tomato, but I promise, they’re prepared in such a delicious way.

One Pan Mediterranean Chicken Meatballs and Orzo
These one pan meatballs are so awesome to add to your weekly dinners. Of course, the highlight is that they come together in one just pan. Less cleaning, less work… just overall less to do, which is always a win in my book. They’re full of flavor – made with shallots, garlic, and sun-dried tomatoes, and then paired with a lemony garlic orzo. To the orzo, you’ll add Castelvetrano olives, more sun-dried tomatoes, and feta. A Mediterranean dream. I very firmly believe that food and nutrition should be simple and easy. So add this incredibly flavorful one pan meal to your rotation. You’ll be so glad you did.

Mushrooms are not only versatile and nutritious, but they also contain that amazing umami flavor. There are so many different mushroom varieties that can be used in different ways. That’s why I love the Mushroom Council’s Mushroom Monday. It’s a day dedicated to celebrating mushrooms. Because if tacos get Tuesdays, then mushrooms deserve a whole day of their own too. Use this day to cook them in recipes or order them at a restaurant. If you’re looking for a good place to start, this recipe is the perfect place.

30 Minute Turkey Meatballs
This recipe has been part of my regular rotation for at least 5 years. I end up making this at least once a month. To date, it’s the only recipe that my entire family actually eats – husband and two toddlers included. In fact, outside of chicken nuggets, this is the only form of animal protein that my older toddler eats. And so, I continue to make it. Often. A few key things set these meatballs apart from other meatball recipes. First and foremost, they’re easy. Just 30 minutes and you’re done. Use that inactive time while the meatballs cook to boil water and prepare some pasta.

Cinnamon Sugar Apple Beignets
I’m determined to find different ways to use apples this season. I’ve found that I either 1) go apple picking and come home with way too apples, or more often, 2) buy plenty of apples after my kids love them… only for them to no longer be interested. Always happens, right?! These Apple Beignets are such a fun and delicious way to use apples. And if you’ve been here a while I’m sure you’ve heard me say: food is meant to be enjoyed. It’s fun – and important – to use seasonal produce not only to make the nutritious meals possible, but also to make food that just tastes good too. Yes, apples do add nutrients and fiber to these beignets. But we’re not eating them for those reasons. And it’s so important to me that you know that that’s perfectly okay.

High Protein Pizza Dip
I barely have words for this pizza dip. I mean, look at it. There’s always something so fun about a dip. Add bread, add veggies, or eat it plain. Sometimes switching things up and turning traditional foods - like pizza - into a dip is way to make food fun. This dip is fun. It’s also beyond delicious!!! You’ve got perfectly melty cheese and salty pepperoni. It also has a base layer made with Greek yogurt that makes the dip extra creamy and really ups the protein in it. Between the Greek yogurt, cheese, and pepperoni, this dip has a lot of protein. I love it as an appetizer - especially if you’re serving guests. Set it out with some toasted sourdough bread or pita chips.

3 INGREDIENT DUNKAROO DIP ☺️
Fellow millennials who grew up on Dunkaroos: you have to try this homemade version of the dip. It’s soooo good and so easy to make. It’s technically ready in just a few minutes, but there’s a bit of prep work to heat treat the flour first. This is a must! I’m all for eating raw cookie dough and cake batter, but raw flour can pose a safety hazard. And it’s super easy to heat treat in the oven quickly before using. Pair this dip with a fun cracker, like graham crackers, teddy grahams, or animal crackers. Or have it with fruit like apple slices, strawberries, or pineapple. It’s delicious no matter how you do it.

4-Ingredient Cookies & Cream Truffles
This recipe is a fun, chocolatey treat to make with or for my kids on Valentine’s Day. Because Valentine’s Day is about love and food is one of the ways we show love. And who doesn’t love chocolate?! These truffles are fun, delicious, and so easy to make. They have just 4 main ingredients (plus sprinkles!) and you can decorate them however you want. I love a version with pink and red heart sprinkles for Valentine’s Day. But of course, you can never go wrong with rainbow sprinkles for any other day of the year. My kids (and I!) loved these. They’re a perfectly fun way to celebrate Valentine’s Day, eat something delicious, and show someone some love.

Crispy Tofu Sliders with Buffalo Mayo
I’m a sucker for recipes that combine sweet and savory. The combination of flavors and textures in this recipe is not to be missed. Tofu is highly underrated. But it’s such a great and easy source of protein. Tofu absorbs any flavor you add to it. Because its texture is so soft too, it’s malleable to work with and can completely transform into different things. Case in point: this crispy tofu. Grating tofu gives you small pieces that can really get crispy in the oven. I decided to pair these sliders with mashed avocado, coleslaw, and a homemade buffalo mayo. The buffalo mayo is almost like a cross between buffalo sauce and ranch dressing. It’s herby, creamy, savory, and sweet. It’s the perfect complement to this meal.
