Delicious Egg Salad
Many years ago, I attended a lecture by Joel Salatin, the outspoken American farmer of Polyface Farms in VA. It was brilliant the way he managed his farm using responsible farming practices. One of my biggest takeaways from the talk was that the animals, just like plants, have cycles and seasons where they produce more products. He said, “Spring is the best time of year for egg recipes because the chickens start laying eggs like crazy!” This is due to warmer temperatures, access to more sunshine
Seasonal Root Hash
1 large turnip (or potato) 1 large sized beet 2 carrots 2 scallions, minced 2-3 tbsp. butter 1/4 tsp. Sea salt Directions Wash the vegetables (turnip, beet and carrots). Use a food processor to shred the vegetables. Or, use a cheese grater to shred the vegetables. Combine scallions with shredded vegetables and season with 1/4 tsp. sea salt. Heat a frying pan and add butter. Add shredded vegetables into the frying pan and fry 10-12 minutes.
