Mastro® Keto Eggplant Pepperoni
These mini eggplant pizzas are a delicious way to turn your favourite food into a low carb and gluten-free meal. Start this healthy take on personal pizzas by brushing your eggplant slices with olive oil and sprinkling with salt and pepper. Then, roast the eggplant at 450 degrees for fifteen minutes in the oven. Once the eggplant is soft and browned, add Mastro® Pepperoni, cheese, and basil and return to the oven under the broiler to melt the cheese.
